This name derives from the typical color change of the
drupe which, during the cycle of
upon maturation, it changes from an initial light green to a reddish color
maturation.
The oil produced by
this cultivar has a color
clear, initially green flows into
golden yellow within a few months, always maintaining a
spicy aftertaste, characteristic
fundamental of
this delicate oil with traditional hints of
almond and tomato, typical Sicilian flavors which are enclosed and d
enhanced by this aromatic product.
